It all comes down to straining. The process where all excess liquid is removed and what remains is thick, decadent and condensed Greek Yogurt. Traditionally at home in the Greek villages, the yogurt is strained in cloth bags up to three times. Industrial methods use centrifuges. In both cases, straining removes some lactose reducing the carb and sugar content to half. However, protein remains intact, so Greek Yogurt is fortified with a much higher protein content per gram. Full of protein, pre- and probiotics, vitamins and minerals, Greek Yogurt is both a superfood and a skin savior.
